Can you believe it has been 6 weeks since I started this blog?  I can’t… time has flown by.

So here is the deal.  For my official “before” weigh-in yesterday morning at Health Magazine, I weighed in at 192.  I wish I had also weighed myself at home that same morning to compare the differences in the scales.  But today, as you will see below, I weighed in at 188 at home.  So I am assuming that my scale at home is off by a few pounds.  However, I have been on The Carb Lovers Diet for 48 full hours now, and maybe that is reflecting in my weight a little.

I have a very positive feeling about this diet and how it fits with my lifestyle and food preferences.  Everything I have eaten so far has been REALLY yummy… and I know some of the options that I haven’t tried yet will be pretty gosh darn good too.  The only thing I a battling with currently is wanting to eat more, which I have resisted with success.  This mostly happens in the afternoon or at night when my energy levels are lower.

This morning I had the banana berry smoothie (with a little whey protein added), for lunch I had the “express lunch plate” which consists of cheese, boiled egg, rye crackers and an apple, for my snack I had greek yogurt with rolled oats & honey, then finally for dinner I had Amy’s black bean & vegetable enchiladas.  I am about to brainstorm & prep my menu for tomorrow… so many options!!  😀
