I am super happy to report a major shift in energy over the past few days!   Especially today, I feel ready to go out and run 3-4 miles.  Last week, I could barely muster up the energy to run 2 miles.  I am sure a lot of that has to do with my consultation with Sonthe last Friday (our Carb Lovers Diet dietician), she tweaked my plan to add in a few additional calories per day.  Bottom line, I just wasn’t eating enough.

Sonthe recommended that I go up to 1,600, but I went to about 1,400 instead (from 1,200 for our “kick-off week”) and I feel really comfortable here. 

I am looking forward to my grocery store visit later this afternoon – we have new items that we are allowed to cook (as of tomorrow for me) and they all look so tasty!!   There are also some “eat out” options that I am very grateful to have.

Here are a few of the new meals & snacks for this week that I am looking forward to:  sirloin steak w/ blue cheese dressing & sweet potato fries; ham, sliced pear, & swiss sandwich; baked two-cheese penne with roasted red pepper sauce; sharp cheddar & egg on rye; smoke salmon & avocado hand rolls; chocolate dipped bananas; and bistro-style sirloin w/ new potatoes.  Mouth watering right about now…

Don’t quote me, but I think by tomorrow morning I will have lost 5 POUNDS in week 1!!!  Can you believe it?  Of course, it isn’t healthy to lose that much weight each week… but I’ll take it!!  My goal from here on out is 2-3 pounds per week.
